You want your ice cream, I’ve heard ya loud & clear. Minty + raw chocolate-y + sweetness = what you want.
MINT CHOCOLATE CHIP ICE CREAM (dairy-free)
* this serves a few people, or you many times
4-5 frozen organic bananas (how much do ya want to eat?)
1 teaspoon Longevity Spirulina
1/4 cup heirloom organic raw chocolate chips
1-2 medjool dates (pitted) OR a spoonful of local raw honey
1-2 drops doTERRA peppermint essential oil (start with ONE)
spring water to catch the blades
Blend all these stellar ingredients in a high-speed blender except the chocolate chips. Feel free to nibble on a few as you blend the rest into a creamy, whipped, better-than-replica of Baskin-Robbins’ mint chocolate chip ice cream. Everyone has probably indulged in that at one point in their life, right? Add the chocolate chips in after everything is mixed together well and you’ve taste tested, and love it. Add the chips & re-blend for a few seconds to leave them in pieces you’ll actually feel when devouring a spoonful. Pour into an ice cream bowl or pint size glass mason jar to take with you on the road on a warm spring / summer day and sprinkle with chocolate chips for decoration and exhilaration!
The ingredients in the famous Baskin-Robbins’ mint chocolate chip ice cream are: Nonfat Milk, Sugar, Corn Syrup, Semi-Sweet Chocolate Chips [Sugar, Chocolate Liquor, Chocolate Liquor processed with alkali, Milkfat, Cocoa Butter, Soya Lecithin (added as an Emulsifier)], Whey Powder, Emulsifier/Stabilizer Blend (Cellulose Gum, Mono and Diglycerides, Guar Gum, Carrageenan, Polysorbate 80), Natural Flavor, Artificial Color (Blue 1, Yellow 5). Yea…. NO THANK YOU. It’s genetically modified (the corn syrup and soya lecithin), refined sugar-laden, non-organic, infused with artificial colors that f*ck up your nervous system and brain, and heavy on the wrong kinds of hormone-injected conventional dairy / fat). Make my version instead, please!

I’m headed to Costa Rica in less than 48 hours to host a superfood detox wellness retreat (from April 20-26) and you can bet that refreshing ice creams like this will make it onto my menu! It’s supposed to be HOT and SUNNY down there, and raw desserts that can also be eaten for breakfast will be included for sure. Think ice cream, fudgsicles, popsicles, frostys, smoothies, and ice cream sandwiches (along with tons of satisfying savory food). Can’t wait!
I adore the retreats mostly because of the deep connections made, the bond that is formed between us all, the inner + outer transformation we all experience, and the emotional transcendence that we are inevitably witness to in ourselves and each other as the days pass..
