Summer Peach & Blueberry Pie

This may be 1 of the only pies you can eat without having to watch your waistline. If you appreciate eating seasonally and supporting local farmers especially now with the abundance of fresh ripe juicy organic fruits, you’ll adore this pie that’s just bursting with delightful flavors & extremely high levels of antioxiants.

I’ve been spending lots of time in the kitchen preparing brand new recipes (ones that I’ve never taught before and that are not in any of my recipe books) to share at my upcoming Raw Desserts, Summer Superfood Drinks & Edible Art Creations Workshop that I’m hosting in Marin County, CA on Saturday July 27. This pie is lovely and I’ll certainly make a version of it for the class! Imagine – 15-20 women (and a few cool men) together in a cozy home eating healthy raw pie, cheesecake, ice cream, ice cream cakes, tarts, cookies, elixirs and more.. the bond that forms between the people at my classes and workshops is invaluable and brings a BIG SMILE to this girls face. It’s truly awesome!

Summer Fruit Pie

Summer Peach and Blueberry Pie

For the CRUST
1 cup organic raw walnuts (soaked & dehydrated if possible)
1 cup organic raw cashews
1/2 cup medjool dates, pitted
1/2 cup golden raisins
1 teaspoon Goji Joy (goji berry extract)
1/2 teaspoon vanilla bean powder
1/2 teaspoon lucuma powder
1/4 – 1/2 teaspoon high quality sea salt

Process the nuts into a flour in your food processor using the “s” blade, and then add in your dates, raisins, Goji Joy, vanilla, lucuma and salt. Process together until it sticks together and taste test. It should be really good! Put it into your pie pan / cupcake or tart tins and place in the fridge.

2 cups fresh organic blueberries (or frozen & let them thaw for a bit)
1 large juicy organic yellow peach
2 tablespoons raw local unfiltered honey (or leave out if you want)
1 teaspoon Goji Joy (goji berry extract)
1/2 teaspoon vanilla bean powder
1/8 teaspoon cinnamon (make your own by grinding cinnamon sticks in the Vita-Mix)

Blend all ingredients in a Vita-Mix until smooth. Taste test and adjust amounts if need be to your liking. Pour into your pie and put back in the freezer for an hour (to get it to hold together well), then place in the fridge so it doesn’t freeze.

Sure you can make the recipe without all the ingredients, but my recipes stand apart from others in that I PACK as much nutrition into them as possible. Don’t skip the Goji Joy on this one – the goji berry extract is what GIVES the pie the “knock it out of the ballpark – it’s a home run” flavor). This is an EXTRACT – not just goji berry powder (there is a difference). Goji Joy (goji berry extract) has had the fiber and sugar removed, making it a SUPER LOW GLYCEMIC sweetener, flavor enhancer, and antioxidant-rich food. And it tastes like candy!!!

– fresh local ripe fruit (chopped nectarines, peaches, wild fruit..)
Chocolate Gold: a sweet chocolate love sauce; (to swirl on top for decoration)
– goji berries / dried mulberries / Inca berries (goldenberries) / golden or thompson raisins
– crushed walnuts or pecans
– coconut shreds
– fresh bee pollen
– raw cacao nibs
