Wild Blueberry Coconut Chocolate Smoothie

For the health-conscious woman who needs a quick meal on the go that’s loaded with flavor and massive amounts of nutrition to maximize energy throughout the day, this smoothie will win you over! Don’t let the simplicity fool you since each ingredient is chock full of the high level of life-enhancing vitamins, minerals, antioxidants, phytonutrients, and amino acids that sustain you on days where you must feel your best. It softens the skin, naturally beautifies, and is anti-aging to boot!

Wild Blueberry Coconut Chocolate Smoothie

Wild Blueberries + Fresh Coconuts + Raw Chocolate = CREAMY BLISS

Ingredients

2 fresh young Thai coconuts
2 cups frozen wild organic blueberries
2 tablespoons raw cacao powder
small handful goji berries (should not be hard & crunchy – this is a sign of poor quality goji’s)
1 teaspoon wildcrafted vanilla bean powder
swirls of raw local honey (to taste)
pinch of sea salt

Optional:

1/2 teaspoon Lucuma powder (to make it taste even more creamy and smooth like ice cream). Lucuma is a whole fruit powder that is high in trace minerals, found at natural health food stores.

Add the water and the meat from the 2 of the fresh coconuts after opening them, plus the other ingredients to the high-speed blender (such as the Vita-Mix). Blend on high for 1-2 minutes until it’s super smooth. Do a taste and texture test and add more of each ingredient to make it most scrumptious to you. Add more fresh coconut water if you’d like it more liquid-y and less if you’d like it thicker, and more coconut meat if you’d like it creamier.

You do not need to add ice to this recipe since the frozen berries keep the smoothie chilled.

  1. Oh, that sounds delicious! I don’t have access to young cocos up here in AK, but I’ve been making something similar with nut milk. Have to avoid cacao and sugar, so no goji berries. But spirulina/chlorella taste awesome with blueberries, and so does maca – have you tried it with those?
