Creamy Veg and Zucchini Pasta Alfredo

Inspired by a recipe I found on Heather Pace’s blog, Sweetly Raw, this week I made one of her ‘Oodles of Raw Noodles’ recipes; my version expanded upon her recipe to make it my own. I had been thinking about making this and the other noodle recipes for some time, and boy am I glad I didn’t wait any longer! This is a recipe that pleases, especially those who love creamy, cheesy, comfort dishes – like I do!

Creamy Veg and Zucchini Pasta Alfredo

Alfredo Sauce

1 1/2 cup raw cashews
3/4 cup spring water
1/4 – 1/3 cup lemon juice
drizzle of olive oil
1 teaspoon sea salt
3 cloves garlic
few springs of fresh parsley
sprinkle of organic white stevia powder or 1 drop organic stevia

Blend all ingredients until smooth and creamy and toss with zucchini or kelp noodles.

Sprinkle with Spirulina to easily add Superfoods to your daily cuisine. Spirulina lends to a cheesy flavor, that’s green ;)

I turned a bunch of zucchini into spiral noodles using a spiralizer to create a dish with more depth. I’ve found kelp noodles are very tasty on their own and it’s really the sauce that makes a recipe when using them. You could try a mix of the two for variation! Add chopped kale, broccoli florettes, onion, and other green leafys for even more nutrition.

I made 2 batches of this recipe; 1 for friends who wanted it dairy free, and another for friends who wanted raw goat’s cheese added to the cream sauce. They both turned out spectacular and were a hit!

Raw Superfood Pumpkin Pie Recipe

My RAW Superfood Pumpkin Pie recipe was created to do 3 fold:

1. Taste absolutely knock-your-toe-socks-off incredible! (Such a BRIGHT pumpkin flavor and classic pastry-like crust)

2. Contain Superfoods, which means that the more of this dessert you eat, the more therapeutic concentrations of minerals and nutrients you get!

3. Be a low glycemic dessert! (The raw pumpkin pulp is said to be medium glycemic, but all other ingredients are very low: no dates, bananas or high-sugar sweeteners. As a side note, I am currently researching WILD pumpkins to discover the origin of our favorite holiday cultivar.)

Ready to Eat Raw Superfood Pumpkin Pie Garnished with Goji Berries

Make my pie to top off a holiday dinner with friends, family, your date, or your very own fly self!

NOTE: This recipe makes a 6″ pie. Double to make an 8″ pie or triple to make a big 10″ pie.

First, make the crust:

- 2 cups macadamia nuts
- 2 1/4 tablespoons Peruvian sweet potato powder (This delicious powder is available at many Whole Foods Markets and online)
- 1 tablespoon birch xylitol (This is my low glycemic sweetener of choice. You can substitute with a medium-glycemic powdered (not a syrup) sweetener like coconut sugar or maple sugar)
- 2 teaspoons raw cacao butter
- 1 teaspoon maca powder
- 1/2 teaspoon sea salt

Blend in a food processor for about a minute until it becomes a paste-like consistency. DON’T over blend into a soft butter. Mold the “dough” into a 6″ pie pan (or a small plate will do just find) and make the rim tall and rippled using you fingers. Set aside and then make the pumpkin cream:

- 3 cups diced pumpkin (cut a pumpkin in half, scoop out the inside with a large spoon and slice off the skin with a knife, then chop the inner flesh into cubes and pack into 3 cups)
- 1/2 cup young coconut meat
- 2 1/2 tablespoons birch xylitol (You can substitute with just about any other sweetener, but birch xylitol is the only very low glycemic one available)
- 2 teaspoons macadamia nut butter (you can always make this yourself by putting macadamia nuts in the food processor for several minutes)
- 1/4 teaspoon NOW brand organic stevia extract powder
- 1/4 teaspoon cinnamon (freshly micro-planed/zest-gratered sticks or powder)
- 1/8 teaspoon sea salt
- 2 small pinches freshly ground nutmeg (It is always best to buy dried whole herbs and grind them yourself using a micro-plane/zester, especially with the delicate nutmeg nuance)
- 2 small pinches vanilla bean powder
- small pinch freshly crushed clove bud (Buy dried whole cloves and take the bud (round part) off of the stem (twiggy part), grind it with your fingers and use about half the bud in this recipe)
- small pinch micro-planed fresh ginger

Pumpkin Pie in the Works

Blend on high in a Vita-Mix using a push-rod to keep the ingredients caught in the blade. Continue blending for at least 3 minutes until warm and creamy. Spatula out the entire pumpkin cream recipe into the pie crust. Since it is warm, you may serve immediately or place in the dehydrator for up to several hours.

Wild Blueberry Coconut Chocolate Smoothie

Wild Blueberries + Fresh Coconuts + Raw Chocolate
= Deep Satisfaction!

Ingredients

2 fresh young coconuts
2 cups frozen wild organic blueberries
2 spoonfuls raw cacao powder
1 teaspoon Carob Peppermint or Vanilla Spice MacaForce (by HealthForce)
small handful goji berries
1 teaspoon vanilla bean powder
swirls of raw local honey or clear agave
pinch of sea salt

Optional

1/2 teaspoon Lucuma powder (to make it taste even more creamy and smooth like ice cream)

Add the water AND the meat from the 2 of the fresh coconuts, plus the other ingredients (in the suggested amounts, adding more or less to satisfy your taste buds) to the high-speed blender (aka Vita-Mix). Blend on high for 1+ minutes until it’s super smooth. Do a taste and texture test. Add more fresh coconut water if you’d like it more liquid-y and less if you’d like it thicker, and more coconut meat if you’d like it creamier.

You do not need to add ice to this recipe since the frozen berries keep the smoothie chilled.

Super Quick, Ideal Road Food

Spirulina – Tahini – Raw Sauerkraut Bowls

Buy or bring with you your favorite 16oz jar of raw sauerkraut (aka cultured veggies). Stir in a few tablespoons of Spirulina Manna or Azteca (HealthForce) and a couple tablespoons of store-bought or homemade tahini. You may need more sauerkraut depending on the length of your road trip.

Mix well. Scoop chunks of avocado into the mix if it sounds good to you and if you want additional creaminess.

Whoila! You’ve got satisfying road food that is easy to travel with – just bring a small cooler to keep it chilled and this will keep your belly feeling good for the long trips. My favorite raw kraut is one that I get from the farmer’s market each week if I don’t have a green batch going at home.

Mexican Fiesta: Secret Hot Pepper Kale Chips!

I had to repost this – this is the most delicious kale chips I’ve ever had and I guarantee if you make them, you will clamor over them! Christian’s blog is jam-packed with cutting edge Superfood nutrition information, my goodness!

You’ll notice that the larger natural food stores these days will have a whole section just for kale chips as big as the rest of the raw food section! This snack/dinner item is healthfully addictive, but unlike potato and corn chips, it is bursting with minerals without the carbs and congestive cooked oils. Now you can make yours at home fresh, the Mexican-style hot pepper way!

Take 4 large bunches of kale (Farmers Market or garden grown is best) and de-stem each leaf: hold the lower stem with one hand, take your other hand and pull out to the tip, stripping the leaf from the fibrous stem. Shred the leaves with your hands and place in a large bowl. If you don’t want to compost the stems, chop or dice them up and mix into fresh guacamole: this will make the guacamole take longer to be gobbled up! Fact: Guacamole is always eaten up faster than any other dish at a raw food potluck… at least until these kale chips came along!

Place the following in a Vita-Mix:

2 Cups spring water
1 1/2 Cup sunflower seeds, pumpkin seeds, or sesame seeds or combination of all three, soaked
1 Cup hemp seeds
1/2 Cup cold-pressed organic olive oil
5 Brazil nuts, soaked
Juice of 3 to 4 limes (or lemons, but limes really hit the spot with raw Mexican fair)
1/2 medium-sized heirloom tomato
1/2 medium-sized sweet bell pepper
2 medium-sized garlic cloves, peeled
1/2 teaspoon dried chipotle or cayenne
1/4 teaspoon dried jalepeno (or 1/2 teaspoon fresh)
1/4 teaspoon cumin seed
1 pinch dried habanero (careful not to get this under your fingernails)
OPTIONAL: 3 Tablespoons fresh aloe vera inner gel

Blend on high until creamy, then add:

1/2 bunch cilantro, de-stemmed
OPTIONAL: 2 teaspoons of your choice of medicinal mushrooms extract powders (reishi, cordyceps, chaga, etc)

Blend lightly, keeping the cilantro in tiny bits, but not turning the batter into a homogenous green. Pour into the bowl of kale and sprinkle on:

3 Tablespoons spirulina powder

Mix together with your bare hands, coating every kale leaf. Spread thinly on dehydrator trays with sheets and dehydrate at 120*F or less for 24 to 48 hours.

Eat by itself or serve with a Mexican dinner containing other highly mineralized dishes:

RawFried Beans (Bean free mock refried pinto Bean Recipe)
White Nacho Cheeze, Dairy Free
Spicy Meat-free Ground Beef

Chocolate Caramel Fudge for Immunity

This recipe needs no introduction. Just make it even if you don’t have all the ingredients (don’t let ANYTHING stop you from starting something new!), and then… devour them. Even if you have just half the ingredients, as long as you have the first FIVE, that’s fine! You can make this any way you want; double up on ingredients you DO have so you reach the total quantity of teaspoons of powders in the recipe.

Chocolate Caramel Fudge

1/3 cup raw cashew butter
1/4 cup softened coconut oil
1/4 cup + 1 tablespoon local, raw, organic honey
1 T raw cacao butter
2 T raw cacao powder
1 tsp each: Chaga, Reishi, Lion’s Mane mushroom powders
1 tsp Vitamineral Green
1 tsp blue green algae (Elixir of the Lake)
1 tsp shilajit powder
1 tsp dark mint MacaForce
1 tsp mucuna powder
1 tsp vitamin E tocotrienols
1 tsp mesquite powder
1 tsp lucuma powder
3/4 tsp vanilla bean powder
1 small handful goji berries

If you don’t eat honey or want to use it, use 1/4 cup clear agave. Do whatever works for you.

Put all ingredients except your sweetener (honey, agave) in a food processor. Process. There may be a bit of oil that separates IF you include the sweetener in this first mixin’ – and if so, it’s okay – no big deal. If you do want to avoid this, just mix all ingredients together and STIR IN the sweetener slowly (in a separate bowl) after everything else has mixed well together in the processor.

Scoop little non-uniform chunks into silicon ice cube trays and freeze until frozen. Eat chilled – you may want to soften for just a couple minutes before eating for the PERFECT texture, ever!

Don’t put them back in the freezer; take out a few so you don’t do the crazy ‘get the fudge out of the freezer!’ dance (taking them out, popping out 1 piece, putting the tray back in in the freezer, craving more, taking them back out and eating another, putting it back in thinking you’re not going to eat anymore… then taking them back out… =)

Summer Raw Cucumber Soup

To cool your nerves and chill your mind, whip up a quick raw green soup this summer!

Raw Cucumber Soup

2 cups very hot water or homemade veggie broth
1/2 cup chopped cucumber
1/2 cup shredded/diced summer squash or zucchini
1/2 cup avocado
1 tbsp extra virgin olive oil
1 tbsp fresh squeezed lemon juice
1/2 tsp fresh dill
1 clove garlic
cayenne to taste (don’t skimp – this is what makes this recipe!)
Celtic Salt (use generously)

Blend in a Vita-Mix until smooth. This is so unusually tasty. I’m pleasantly surprised that I was able to use all these summer veggies in a soup that is super refreshing with a spicy kick to boot. :)
