Mexican Fiesta: Secret Hot Pepper Kale Chips!

I had to repost this – this is the most delicious kale chips I’ve ever had and I guarantee if you make them, you will clamor over them! You’ll notice that the larger natural food stores these days will have a whole section just for kale chips as big as the rest of the raw food section! This snack/dinner item is healthfully addictive, but unlike potato and corn chips, it is bursting with minerals without the carbs and congestive cooked oils. Now you can make yours at home fresh, the Mexican-style hot pepper way!

Take 4 large bunches of kale (Farmers Market or garden grown is best) and de-stem each leaf: hold the lower stem with one hand, take your other hand and pull out to the tip, stripping the leaf from the fibrous stem. Shred the leaves with your hands and place in a large bowl. If you don’t want to compost the stems, chop or dice them up and mix into fresh guacamole: this will make the guacamole take longer to be gobbled up! Fact: Guacamole is always eaten up faster than any other dish at a raw food potluck…at least until these kale chips came along!

Place the following in a high-speed blender:

2 Cups spring water
1 1/2 Cup sunflower seeds, pumpkin seeds, or sesame seeds or combination of all three, soaked
1 Cup hemp seeds
1/2 Cup cold-pressed organic olive oil
5 Brazil nuts, soaked
Juice of 3 to 4 limes (or lemons, but limes really hit the spot with raw Mexican fair)
1/2 medium-sized heirloom tomato
1/2 medium-sized sweet bell pepper
2 medium-sized garlic cloves, peeled
1/2 teaspoon dried chipotle or cayenne
1/4 teaspoon dried jalepeno (or 1/2 teaspoon fresh)
1/4 teaspoon cumin seed
1 pinch dried habanero (careful not to get this under your fingernails)
OPTIONAL: 3 Tablespoons fresh aloe vera inner gel

Blend on high until creamy, then add:

1/2 bunch cilantro, de-stemmed
OPTIONAL: 2 teaspoons of your choice of medicinal mushrooms extract powders (reishi, cordyceps, chaga, etc)

Blend lightly, keeping the cilantro in tiny bits, but not turning the batter into a homogenous green. Pour into the bowl of kale and sprinkle on:

3 Tablespoons spirulina powder

Mix together with your bare hands, coating every kale leaf. Spread thinly on dehydrator trays with sheets and dehydrate at 120*F or less for 24 to 48 hours.

Eat by itself or serve with a Mexican dinner containing other highly mineralized dishes:

White Nacho Cheeze, Dairy Free
Spicy Meat-free Ground Beef

Chocolate Caramel Fudge for Immunity

This recipe needs no introduction. Just make it even if you don’t have all the ingredients (don’t let ANYTHING stop you from starting something new!), and then… devour them. Even if you have just half the ingredients, as long as you have the first FIVE, that’s fine! You can make this any way you want; double up on ingredients you DO have so you reach the total quantity of teaspoons of powders in the recipe.

Chocolate Caramel Fudge

1/3 cup raw cashew butter
1/4 cup softened coconut oil
1/4 cup + 1 tablespoon local, raw, organic honey
1 T raw cacao butter
2 T raw cacao powder
1 tsp each: Chaga, Reishi, Lion’s Mane mushroom powders
1 tsp Vitamineral Green
1 tsp blue green algae (Elixir of the Lake)
1 tsp shilajit powder
1 tsp dark mint MacaForce
1 tsp mucuna powder
1 tsp vitamin E tocotrienols
1 tsp mesquite powder
1 tsp lucuma powder
3/4 tsp vanilla bean powder
1 small handful goji berries

If you don’t eat honey or want to use it, use 1/4 cup clear agave. Do whatever works for you.

Put all ingredients except your sweetener (honey, agave) in a food processor. Process. There may be a bit of oil that separates IF you include the sweetener in this first mixin’ – and if so, it’s okay – no big deal. If you do want to avoid this, just mix all ingredients together and STIR IN the sweetener slowly (in a separate bowl) after everything else has mixed well together in the processor.

Scoop little non-uniform chunks into silicon ice cube trays and freeze until frozen. Eat chilled – you may want to soften for just a couple minutes before eating for the PERFECT texture, ever!

Don’t put them back in the freezer; take out a few so you don’t do the crazy ‘get the fudge out of the freezer!’ dance (taking them out, popping out 1 piece, putting the tray back in in the freezer, craving more, taking them back out and eating another, putting it back in thinking you’re not going to eat anymore… then taking them back out… =)

This recipe is hands-down, without question, one of the most scrumptious desserts I’ve ever made in my life. It’s OUTSTANDING. If you don’t try it, you’re nutz. It’s so wonderfully decadent and rich!

These chocolate nuggets are extremely smooth, creamy dreamy, absolutely mouth-watering, and simple and quick to make! Super nutritious too! One nugget will not be enough.

Please make this and comment how you like it! Try it even if you’re not used to adding Superfoods to your chocolates. Superhero-style desserts! :)

Raw Chocolate Dream Nuggets
1 cup raw cacao butter
1 cup raw cacao powder
2 spoonfuls raw almond butter (make your own if you can!)
1/2 cup local, raw organic honey
spoonful raw cacao nibs (not necessary but they add a nice chip texture)
1/2 tsp wild blue green algae
1/2 tsp shilajit powder
pinch Himalayan Crystal Salt / Celtic salt
pinch organic white stevia extract powder (if you have it – if not, no big deal)

Makes as many shapes and molds as you want! Make some thick and some thin, just for fun.

Blend in a Vita-Mix ideally (it may warm gently which is fine – you want it to be a thinner consistency for easy pouring) or in a food processor (smaller bowl inside the bigger bowl unless you double or triple the recipe). Pour into ice cube trays or cute molds with different shapes and chill until frozen.

You can add cacao nibs (or even homemade raw chocolate chips), goji berries, and/or any other addition that sounds appealing to you. Pour into ice cube trays (or cute mold shapes if you want to have even more fun) and freeze. Summer Raw Cucumber Soup

To cool your nerves and chill your mind, whip up a quick raw green soup this summer!

Raw Cucumber Soup

2 cups very hot water or homemade veggie broth
1/2 cup chopped cucumber
1/2 cup shredded/diced summer squash or zucchini
1/2 cup avocado
1 tbsp extra virgin olive oil
1 tbsp fresh squeezed lemon juice
1/2 tsp fresh dill
1 clove garlic
cayenne to taste (don’t skimp – this is what makes this recipe!)
Celtic Salt (use generously)

Blend in a Vita-Mix until smooth. This is so unusually tasty. I’m pleasantly surprised that I was able to use all these summer veggies in a soup that is super refreshing with a spicy kick to boot. :)

Sweet Beauty Mylkshake

There are dozens of reasons why eating raw, living, fresh and organic foods resonates with me so well and I’ll get more into that in future posts. I find it quite ironic that it was just until this past year that I was relatively resistant to the whole idea. The approach sounded complicated, impractical, inconvenient and unsatisfying, and EXTREME! Now I smile and reflect on that; it’s been a gradual process that can differ greatly with each one of us.

I’m so passionate about this pure way of living that I spend a majority of my spare time soaking up as much reading material as possible. I certainly didn’t ever envision a night like tonight where I have endless energy and decide to make a fresh Brazil nut mylk and another version of my chocolate blendie, at 10pm. These nights are more and more common and I love them! I’m bursting with the joy of feeling fantastic and my life path continues to become more crystal clear – can anyone relate?!

SWEET BEAUTY MYLKSHAKE

1.5 cups spring water
1 handful (about 1/2 cup) raw cashews
1 banana
4+ dates, sweeten to your liking
2 tbsp raw chocolate powder
1 tsp MSM powder
1 tsp Vitamineral Green (HealthForce Nutritionals)
1 tsp angstrom sulfur (beauty mineral), if you have it

Blend in a Vita-Mix, chill and revel in the supreme taste! This is yet another version of chocolate goodness blended up together.

Edible Goddess’ Raw Chocolate Blendie

For the launch of this Edible Goddess blog, I thought I’d give you something that I’m constantly asked about: my crazy creations of super delicious smoothies and what I call, blendies. Usually when people try them, they gasp, as if shocked that such a creamy shake could exist (not having a clue as to what’s in it) – but it does, and I’m here to share with you the recipe! If there’s an interest, I’ll keep posting these scrumptious recipes that I’ve gathered over time as well as nutritional skooshes (sk-O-shiz) – (a silly way to describe advice, tidbits, info., fascinating facts) of all things related…

RAW CHOCOLATE BLENDIE – ingredients are always organic (in every recipe on this blog)

* 1.5 cups fresh coconut water
* 1 medium banana
* 3-4 pitted dates
* 1/2 cup nuts (raw cashews are ideal for that creamy texture, then Brazil nuts or macadamia nuts)
* 2 tbsp raw chocolate powder or cocoa nibs
* Vanilla bean powder, maca powder, 1 tbsp coconut oil, MSM powder (see below), vitamin E tocotrienols/rice bran solubles (raw super vitamin E)

Blend like crazy in a high powered machine (Vitamix if available) until it’s super creamy & well-blended. Resist the temptation to inhale this concoction and put it in the fridge for an hour (or until it becomes all you can think about). Blendies taste best when their super cold.

Note: I’m not one to follow recipes exactly, especially with something that potentially has so many variations. Adjust to your liking (more banana to thicken, more dates to sweeten, more nuts for texture, more chocolate, for… more chocolate :) )

Next time, use freshly made almond milk (very easy to prepare – I know, it first sounded waaaay too complicated, but now there’s just no other option & you’ll see why if you ever get around to doing it too), instead of the coconut water (found at any natural health food store, yet know that all packaged coconut waters are pasteurized) – or preferably crack open a real coconut (natural food stores or Asian markets)! You can source the best raw chocolate, truly raw cashews, MSM, and vitamin E tocotrienols from raw food stores online.

The recipe here is just the start of many variations and I must say I do often vary it for that surprising melt-in-your-mouth (‘I can’t believe how good this is’..) milkshake taste – yet, in the cold, dairy-free kind of way.

Tip: pour into ice cube trays and freeze for a tasty treat later.
