Strawberry Chocolate Popsicles with Coconut Milk

To celebrate my 8 years of blogging – anniversary yesterday July 4 – we made Popsicles / Fudgsicles and you’ll find the refreshing recipe below. So many health blogs use superfoods as an optional ingredient, and I’m not one of those – I really feel that they truly accelerate your health faster than whole food supplements can, and when it’s this easy to integrate them into your dietary repertoire, why not take advantage of such an easy and fun choice!

Strawberry Chocolate Popsicles

1 can organic full fat coconut milk, or make your own
2 cups frozen organic local strawberries (in season)
2 organic (and ripe) frozen bananas
1/4 cup organic raw cacao powder
2 teaspoons lucuma fruit powder
1 teaspoon Goji Joy*
1 teaspoon Maca Bliss*
Drizzle of maple syrup to taste, or your preferred sweetener

Blend all ingredients in a high speed blender. Pour into molds of choice and stick in the freezer for 15 minutes. Remove, and place the stick into the mold, and pop back into the freezer for another 1+ hours. When you’re ready to enjoy them, run each treat under warm water for a few seconds to help easily release the Popsicle!
