Mulberry Apricot Goji + Vanilla Oat Energy Bars

In my work as a transformation life and nutrition coach, I’ve been witness to thousands of people who lack energy on a regular basis. Do you? Some suffer from overall depleted energy throughout the day, some get hit mid-afternoon, and some can barely pull themselves out of bed. It’s a drag to feel this way and the energy bars in boxes at stores are most often compromised in some form with unnecessary ingredients, non-organic ingredients, and/or they lack mineral density, or are food combining disasters for the digestive system.

This is my homemade answer (in a bar) for me, and you! I hope you enjoy it … 2 of my girl friends went wild over them at our recent girls night and take note – they’re way extra yummy stored in the freezer & eaten cold 🙂

MULBERRY APRICOT GOJI + VANILLA OAT ENERGY BARS

2 cup gluten free organic oats (buy in bulk)
1/2 cup organic raw coconut shreds
3/4 cup dried organic mulberries
10 dried organic apricots
3 tablespoons organic nut butter of choice
1/4 – 1/2 cup organic raisins
8 pitted organic medjool dates
2 tablespoons GOJI JOY
1 teaspoon ground wild vanilla bean
1/4 – 1/2 teaspoon high quality sea salt
drizzle of pure organic maple syrup to taste

DIRECTIONS

Add the oats and coconut shreds to your food processor and process just a few seconds to break them down and merge them together. Add all other ingredients except for the maple syrup, and process again until the dough semi holds together, stopping to taste test and test the consistency throughout. Drizzle in your maple syrup as it’s running and adjust to your preferences. It really brings together this recipe and creates a distinct yum factor that the dried fruit alone does not bring 🙂

Get a cookie sheet ready and place a layer of parchment baking paper over it. Scoop out the dough from the food processor and flatten with your hand so that it’s even in thickness. A trick to get it pretty perfectly uniform is to place another layer of parchment paper over the top and roll a flat glass over it like you would with a rolling pin.

They’re ready to eat now, however taste beyond delicious when chilled first in the freezer. Pop in the freezer for an hour, and then proceed hand out to those who want plump, semi-dense bars that result in greater levels of joy, smiles, laughter, and good times!

The GOJI JOY is the fruity (yet sugar-free) contribution to this energizing bar, and you do not want to skip it! The bars feel somewhat unbalanced to me, and heavier without this addition.

I created this for a loved one who is carrying her 1st baby and every single ingredient has a clear purpose for why it’s present in this recipe. I’ve researched like crazy about this. Whether it’s an ingredient that calms the nerves, tonifies the uterine muscles, or provides specific vitamins and minerals during this blessed time in her life, this is an ideal energy bar or dessert bar for a woman who is pregnant and conscious of what she eats (ALL WOMEN should be!).

They’re easy to make and keep stored in the freezer so she’s always got something quick ready to go. She’ll want it. Even just a couple bites are quite satisfying, which was the intention! Mission accomplished. Hooray!
