    HELP!
    I’ve been making homemade chocolate for a couple of years. I am a grad of IIN in NYC. I usually use a blend of Raw Cocoa butter, powder, coconut oil, almond butter or raw black tahini, agave or raw honey or maple syrup or coconut sap (etc), hawaiian black sea salt, cayenne pepper.
    It is yummy, but I wanted to try to get a milk chocolate like product now, and when I added almond milk to the double boiler, the chocolate siezed. Was it temperature related or not enough fat in almond milk?
    Do you have any suggestions t get a less dark chocolate for variety??

      Chocolates need to be 0% water. If you use agave or honey (slight water content in each of those) you need to NOT over mix or the chocolate will eventually seize due to the molecular nature of water. Almond milk is high water content, so you would be making more of a chocolate frosting rather than hard chocolate. Now, if you dehydrated almond milk into a milk powder, then added that to your chocolate, it would be the best ever! It’s tricky to do without having the milk ferment into a yogurt powder, so you have to dehydrate it very quickly, maybe put some colloidal silver or something to keep the lactobacillus from going off. Hope this is helpful..
